People working at Galvanize’s new Platte Street location are in for a tasty treat — compliments of the owners of Oak at Fourteenth in Boulder and its Denver counterpart Acorn. The gourmands behind those wildly popular Colorado restaurants are going to be opening a new rotisserie themed, fast-casual restaurant inside of Galvanize.
The new restaurant, which is going to be called Brider, will feature a large rotisserie where entire chickens, briskets and other large cuts of meats will be spit-roasted over gas-flames. To keep people’s cholesterol in check the restaurant will also serve rotisserie-roasted vegetables.
As fancy as this sounds, the restaurant will be fast-casual, letting people grab some chef-created cuisine and get back to work. As anybody who works over there knows, the area is not exactly a cornucopia of food options.
Ok, so there are probably at least two burning questions you still have. Here goes: Yes, they will serve booze. There will be 18 taps, which will serve red wine, white wine, beer, house cocktails and something non-alcoholic (think cold brew coffee). As for when the space will open, think mid-November.
